In the kitchen this week is Dane Shelton, our talented Head Development Chef. If his savoury muffin recipe of is anything to go by he is the king of lockdown grub.

RECIPE: DANE'S SAVOURY MUFFINS

INGREDIENTS:

400g butternut squash

40g sliced spring onions

10-20g sliced red chillies

4 large free-range eggs

35g cottage cheese

 190g self-raising flour

40g grated parmesan cheese

10g pumpkin seeds

10g blue poppy seeds

  1. 1. Preheat the oven to 180°C. Line a muffin mould with greaseproof paper squares.
  2. 2. Peel the butternut squash and grate, Slice spring onions and chilli and add altogether, reserving half the chilli for later.
  3. 3. Add eggs, cottage cheese and flour, then most of the Parmesan and season with salt and pepper, mix well.
  4. 4. Divide the muffin mixture between the cases (about 75g each). Sprinkle over the pumpkin seeds, poppy seeds, remaining chilli and parmesan
  5. 5. Then bake for 30 minutes or until golden brown.
